COCONUT PLANTAIN POTTAGE
Ingredients:
Green Plantains (or Half Ripe)
Goat meat (or any protein of your choice)
Coconut milk
Fresh peppers (Blended)
Crayfish (Ground)
Garlic
Ginger
Onions
Carrots
Red bell peppers
Green bell peppers
Salt
Seasoning cubes
Method:
First wash your meat, season properly, cook till tender and set aside.
Break, grate and add warm water to your coconut to extract the milk.
You can as well buy a can of coconut milk off the shelf of any supermarket.
Then wash, peel and dice the plantains in cubes.
In a pot, add the cubed plantains, blended pepper, ground crayfish, grated ginger, garlic, seasoning cubes and salt to taste.
Pour in the coconut milk just enough to cover the contents of the pot and Cook on medium heat.
Wash and scrape carrots, onions and bell peppers, dice and set aside.
After about 25mins or when plantain is soft, pour in the already cooked goat meats with or without the stock, depending on the quantity of water needed more.
Taste and correct seasoning. And continue to cook.
Add the diced carrots and onions and stir with a wooden spoon to thicken and cook for 5 mins more.
Add the diced bell peppers lasts.
You can top off with a little vegetable oil if you wish but coconut milk has its own oil.
Serve hot and enjoy with a chilled bottled of drink.
