HOW TO MAKE YAM BALL
Ingredient

Half tuber of yam

1 onion

4 tablespoons of butter

3 eggs

Seasoning cube ( 2 )

Sardine fish

Three scotch bonnet pepper

A teaspoon of powdered garlic

Vegetable oil

Salt ( A pinch of salt)

Breadcrumbs

Directions

First of all, peel and wash yams thoroughly to remove sand and dirt

Cut the yam into small sizes, place in a cooking pot, add seasoning cube and clean water, apply heat

Leave to boil till the yam is cooked and soft. Put off the heat, drain water from the yam and set aside.

If you are using canned sardine, drain oil from the fish and set aside.

Wash and chop the onion and pepper, then fry with the sardine oil for 8 minutes

Transfer the boiled yams into a big clean bowl, then add the 4 tablespoons of butter and mash the yams till smooth

The use of blender and food processor is not encouraged as it will affect the consistency of the yam balls.

Break two of the eggs into the yam, add the garlic, onion and pepper mix, mix together. Then add the fish and mix thoroughly

Check the taste of the mixture and add more seasoning if necessary and a pinch of salt

Pour vegetable oil into your frying pan and leave to preheat

Furthermore, break the other egg and whisk it and set aside, also pour the bread crumb into a plate and set aside.

Now, while the oil is preheating, you take a bit of the mashed yam, mould it into a small ball and dip into the egg, then into the bread crumbs and set aside in a clean plate

Repeat this process till all the mashed yams is finished.

By this time, the oil should be ready for frying, place the yam balls into the oil carefully. Do not overcrowd the pan.

Fry the yam balls until the colour changes to golden brown.

Take out the yam balls and place in a paper towel to drain excess oil

Your delicious yam balls are ready for munching with any fruit drink of choice.
