3) Peel the Irish potato, cut it into small cubes not too tiny wash it and boil it for 10 to 15 minutes on high heat then set it aside.
Note; If you want to make the Italian fiesta method, then don’t boil it, rather you deep fry the potatoes for 10 minutes and set it aside.
4) Now break 8 eegs into a large bowl whisk till it’s well done whisked. Add the sliced fresh pepper and onion and stir it with a wooden spoon.
Add the two tablespoons of plain flour and stir till the flour is well mixed with the eggs. Now add the tomatoes, bell green pepper, curry, thyme, Benny, vegetable oil, knorr cubes and salt to taste.
5) Set your oven to 170°C (335°F) and leave to preheat while you continue with the fiesta.
Get your boneless chicken and cut it into medium sizes and add it to the egg mixture and stir add the boiled or fried potatoes and stir it properly.
6) Get a baking pan or cake pan and rub the inside with vegetable oil. This is to make the fiesta easier to remove from the pan when it’s ready.
7) Pour the fiesta mixture into the pan and put it inside the oven, bake till it’s ready.
FIESTA WITHOUT OVEN.
If you don’t have oven that’s not an issue, here’s what you should do.
Method 1)
You can use your gas cooker or stove. In that case put an old empty pot on the gas cooker and lower the heat. Place 3 stones of the same sizes inside the pot and put the pan inside. That will do.
Method 2) “No Cake Pan”
Place a frying pan on the gas cooker and apply some oil inside the frying pan. This is to make the fiesta easier to remove.
Now pour the fiesta mixture into the frying pan and cover it. Check from time to time and when you see that everything is no longer wet but dry it means it’s ready.
Note;
You can use fish, meat or hotdog in making the fiesta, it shouldn’t be only chicken.
