Deep frying/ baking
Soft coconut chin chin » are a delightful way to snack. The presence of desiccated coconut gives a crunchy feel to the whole eating experience.
Coconut meat has anti-biotic properties, which makes it act like a probiotic feeding good bacteria in your tummy. Including bacteria that cause tooth decay.
INGREDIENTS
2 cups all-purpose flour
½ cup salted butter
½ cup coconut milk
½ cup sugar
½ tsp. nutmeg
1 tsp. baking powder
1 egg
Oil for deep frying* »
1 cup desiccated coconut
INSTRUCTIONS
In a large mixing bowl, pour your flour inside. Add sugar, baking powder and desiccated coconut
Add your butter. Mix well with your hand until butter is evenly incorporated
Whisk your egg until smooth. Make a well in the centre of your flour. Pour your eggs in.
Add half milk to the egg. Mix well whilst kneading
Gently keep adding milk when needed until a slightly stretchy texture is achieved. Be careful not to add too much milk or make the dough sticky
Sprinkle a little flour on a clean flat surface. Roll the dough using a rolling pin
If you are going to fry: cut out into desired shapes or size. Deep fry in hot oil o medium heat until golden brown
For the baking option : line the baking pan with parchment paper. Spray with oil spray. Lift the rolled dough inside it. Cut into desired shapes and sizes. Place in a preheated oven at 170 degrees for 20mins
